COMFORT FOOD - TEA BISCUITS AND VARIATIONS

Basic Tea Biscuits

2c all purpose flour
4tsp baking powder
1tsp salt
1/3c butter
1c milk or cream

Pre-heat oven to 450F

Combine dry ingredients.
Cut in butter with a pastry cutter or 2 knives until the mixture is the consistency of course oatmeal.
Make a well in the center of the mixture and add the liquid.
Stir batter until it comes away from the sides of the bowl.
Place dough onto a floured surface and kneed lightly.
Roll out to desired thickness.
Cut dough with a floured biscuit cutter, or simply cut into squares.
Place on an un-greased cookie sheet.
Bake 12-15 minutes until the bottoms are just golden.

These go with EVERYTHING!!!! Or nothing but a cup of tea!

15 – 18 biscuits.


MAKE ‘EM WITH CHEESE

Use only ¾ c of salt
Use only ¼ c of butter
Add in ¾ c of grated or crumbled cheese of your choice.

Proceed as usual with making the biscuits. Excellent served with soup, chili, chowder, stew or with serve with jam or marmalade for breakfast. These will be gobbled up quickly!


MELT IN YOUR MOUTH CINNAMON BISCUITS
My mom’s recipe.

Add ¼c of white sugar.
Melted butter
Powdered cinnamon
Golden brown sugar

Make the biscuit dough as usual.
Roll out in a large rectangle approximately ¼ in thick.
Spread melted butter all over the dough.
Sprinkle liberally with powdered cinnamon and golden brown sugar.

Roll up the rectangle lengthwise like a jelly roll. Cut with a sharp knife into ¾ in slices.
Place the slices flat on a parchment lined baking sheet approximately 2 inches apart.
Bake as for tea biscuits until lightly golden.

Be careful handling the baked biscuits as the melted brown sugar is a burn hazard. Best served warm! Make LOTS as these don’t last long.

My children’s friends always campaigned for me to make these when they visited. As they got older they scammed the recipe so they could make them themselves at home. The ultimate comfort food. Perfect with a lovely cup of hot tea!
