CUSTOMIZABLE BISCOTTI RECIPE

CUSTOMIZABLE BISCOTTI RECIPE

Makes: 3 dozen

2 ¾ c all purpose flour
1 tbsp baking powder
1 tsp cinnamon (or whatever spices you wish to add according to taste)
3 tbsp of liquid (milk, coffee, juice, including the flavouring you want to add)
½ cup of oil
1 c of white sugar (You can make it with less if you like)
3 eggs
1 c choc chips (or whatever chips, nuts, dried fruit, etc you wish to add)

In a large bowl, whisk together flour, baking powder and any spices you are using.

In a medium bowl, whisk together liquid, oil, sugar if used, then eggs until combined.

Stir wet mixture into dry mixture until just combined. Stir in chips, nuts, or dried fruit.

Shape into a long log about 3’ in diameter lengthwise on a greased or parchment lined baking sheet. Flatten ends and sides using a long wide knife.

Bake in the center of a 250F oven for 40 to 45 minutes, or until JUST firm. Let cool on pan for 10 minutes.

Transfer log to cutting board. With a serrated knife cut into ½ in – 1 cm slices. Stand slices upright spaced apart on baking 2 baking sheets. Bake in 325F oven, for 15 to 20 minutes, or until sides are no longer springy to the touch. Let cool on pans.
